Ejjeh Ma'Baqdunis (Syrian Parsley Omelets)
That garnish you take off your plate in a restaurant is more delicious and healthier than you would believe! Yes, I’m talking about the humble bunch of parsley in the produce department that hardly gets a nod by shoppers!
Let me tell you what Sitto did with it…
Sitto usually had a fresh bunch of curly parsley in a glass of water on her counter every week and lucky for us, she'd put together a plateful of those delectable Ejjeh omelets in no time.
Now, many years later, the Syrian girl in me comes out every time I see a fresh, green, beautiful bunch of parsley! My thoughts immediately go to Ejjeh Ma' Baqdunis, my dear Sitto's Parsley Omelets! And I think it must be in the genes...because just the other day, my daughter said..."Mom, I really am craving Ejjeh...we need to make some!" I had to smile because I know the feeling!
Join me in the kitchen while you watch me make it. Then pick up that beautiful bunch of parsley, some eggs, yellow onions and spices and create your own mini Syrian Parsley Omelets!
