Zait W' Zahtar, Spice Bread
Long ago memories of Zahtar Spice Bread always reminded me of being a hungry adolescent and asking Sitto what I could have for lunch. As I ran into her kitchen after school, Sitto would ask, ”Jouanneh?" and I would smile in hungry agreement. She'd suggest a few tasty things, but I always said yes when she asked, "Zait W' Zahtar?"
That humbled Middle Eastern snack, a simple Spice Bread, is so loved as the go-to snack throughout Syria. Olive oil and Zahtar spice is mixed into a paste and slathered onto dough before baking or onto already baked Arab bread.
Did you know that you can mix your own Zahtar spice? It’s included in the cookbook along with the recipe for this Zahtar Spice Bread. Our Aleppo variety is green because of the accent on thyme. Some regions in the Levant make a brown version by adding more Sumac to the mix. In fact, many households have their own special Zahtar mixture which they enjoy.
